The Lasso’s Family Innovation and Tradition: Chiroso Coffee.
Experience the exceptional Chiroso variety coffee from Evelio Lasso’s 3 acre Los Guayacanes farm, located in the picturesque village of Buenos Aires, Nariño, at an altitude of 1900 meters. Evelio, alongside his family, has built a reputation for producing outstanding coffees by embracing unique varieties and innovative processing methods.
The Lasso family’s dedication to quality and innovation is evident in every sip. Evelio employs a vacuum fermentation technique, where the coffee is fermented in airtight barrels with degas valves for 40 hours. This meticulous process, and is followed by careful washing and a slow, two-week drying period on indoor patios.
Upon brewing, you’ll be greeted by a fragrant bouquet of honey, panela, and red fruits. The acidity is clean, similar to the crispness of an apple or pear, making this coffee a delightful experience from start to finish. This coffee not only celebrates the rich growing region of Nariño but also the Lasso family’s unwavering commitment to pushing the boundaries of coffee craftsmanship.
